Snow Day Banana Bread

YAY!!!  Today’s a snow day!  I must’ve been feeling a little giddy because I decided to make banana bread.  If you know me, you know I never bake.  I blame my boots.  I got a new pair of brown boots a couple of weeks ago and the colour was called banana bread.  I’ve been craving it ever since then.  I only had whole wheat flour in the house so I googled “banana bread”, “chocolate chips” and “whole wheat flour”.  Here’s the recipe I found and used:

Whole Wheat Banana Chocolate Chip Bread

Ingredients

  • 1/2 cup (1 stick or 4 ounces) unsalted butter
  • 1/2 cup (3 3/4 ounces) packed light or dark brown sugar
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (12 ounces) mashed ripe banana (about 3 medium-to-large bananas)
  • 1/4 cup (3 ounces) honey
  • 2 large eggs
  • 2 cups (8 ounces) whole wheat flour, traditional or white whole wheat
  • 2/3 cup chocolate chips

 Directions

1. Preheat oven to 350 degrees. Light grease a 9×5-inch loaf pan

2. Beat together the butter, sugar, baking soda, salt, cinnamon, nutmeg, and vanilla in a medium bowl until smooth. Add the banana, honey, and eggs, beating until smooth. Add the flour and chocolate chips stirring until smooth. Spoon the batter into the prepared pan and let it rest at room temperature, uncovered, for 10 minutes.

3. Bake the bread for 50 minutes or until a cake tester inserted into the center comes out clean. Remove the bread from the oven, and allow to cool for 10 minutes before turning it out of the pan onto a rack to cool completely.

Note:  I didn’t have unsalted butter so I used salted and just omitted the salt.

It didn’t quite fluff up the way I was expecting.  Maybe that’s the nature of whole wheat flour.  I have no idea.  I know it’s pretty yummy, though!

Newfoundland and Labrador

I love the new series of Newfoundland & Labrador tourism TV ads so much, I can’t even tell you.  When I first watched them today, I felt incredibly guilty for taking this province and this city for granted.  I often look at the work of other photographers and find myself thinking “wow, they’ve got such cool places to shoot”.  Why is it so hard to appreciate what’s right in front of you?  I’m a living in one of the most scenic places in the world!

This first one is about the city of St. John’s, specifically.

The next one references the fact that because of our unique time zone,
we are at least 30 minutes ahead of everyone else in North America.

I Heart: bareMinerals Foundation

There are times in our lives when we discover things we either didn’t know existed or we didn’t know we needed.  From that day on, we wonder how we ever got by without them.  Coffee, facebook, microwaves, cheesecake, online shopping.  You know the ones I’m talking about. 

My most recent life-changing discovery is bareMinerals foundation.  I’ve always been a liquid foundation girl.  So, when I first heard about bareMinerals, given that it’s a crushed powder, I was skeptical.  But I really wanted to give it a try based on the fact that it’s made of 100% pure crushed minerals… no preservatives, fillers or irritants.   It also has a non-chemical SPF 15 and I’m a stickler for sun protection.

I took a chance and ordered from QVC (a shopping channel in the US).  From the first application, I was totally hooked.  It has great coverage and actually improves the condition of your skin.  In fact, I’ve since thrown out all of my old make-up and now I use only bareMienrals.  It’s that good.
